The cubers that LEM, GM sell use a knife and simply cut the meat on both sides about 2/3 the way through. A real cuber has pointed and curved wheels that puncture the meat then tear it and knit the two sides together.
We butchered four deer yesterday and spent as much time tweaking and adjusting this saw as we did actually cutting meat. The grinder works pretty good, and I can find the cutters at Gander Mountain for replacements. The throat is small, though, and that slows down the process of grinding 25 to 50 pounds of meat in an afternoon.
